Porcini Mushroom Ravioli with Mushroom foam, saffron and balsamic vinegar is a refined, richly-flavoured dish that conquers the palate.

500g Reggiana Gourmet Porcini Mushroom Ravioli
Saffron Pistils
200g Porcini Mushrooms
100g Fresh cream
100g Milk
Balsamic vinegar pearls
100g Cream for the siphon
Preparation
- Cook the Porcini mushrooms with the milk, cream, salt and pepper for 5 minutes and puree. Put this cream into the siphon and add 100g of cream
- Cook the Reggiana Gourmet Porcini Mushroom Ravioli, sauté in a pan with a drizzle of extra virgin olive oil and place them in the serving dish.
- Add the foam and garnish with Saffron pistils and balsamic vinegar.
