Pecorino and black pepper Ravioli with potato and turmeric cream and cotechino chips

500g Reggiana Gourmet Pecorino and Black Pepper Tortelli
500g Potatoes
150g butter
150g leeks
Broth
Turmeric
Cotechino
Preparation
- For the sauce: sauté the leeks in a pan, then add a teaspoon of turmeric. Add the potatoes and a little broth. Leave to cook with the lid on. Puree the mixture to make the cream.
- For the chips: Cook the cotechino and once cooled cut it into thin slices, lay them on baking paper and bake them in the oven for 13 minutes at 160°C.
- Assemble the various elements to compose the dish.
